Step 4) Add 1/2 tsp ginger-garlic paste and cook for 20 seconds ..
Step 5) Add greenchilli, 2 chopped tomato and cook on medium-heat until soft ( takes 2 – 3 minutes )..
Step 6) Add spice powders, asafoetida (hing), salt and cook for 1 minute ..
Step 7) Pour 1 cup water, cover and bring it to a boil ..
Step 8) Once it starts boiling, add the rava/sooji, cover and cook on low-heat for 8 minutes ..
Once ready,.. let it cool.. serve when slightly warm
Serve 1 cup upma for 2 – 4 year toddlers.. Serve 2 cups for 5+ kids..
Recipe #5 – Egg ( boiled & omlet )
Boiled egg ( Serve 1 egg for 2+ toddlers & kids )
Cut hard boiled eggs into small pieces
Add a pinch of salt & pepper.. and serve warm
or let them help themselves (after 2.5 years) ..littleones playaround with egg yolks.. keep an eye 😀
Omlet
Beat 1 egg with a pinch of salt & pepper
Heat a pan and add some oil or butter
Pour the beaten egg and cook until the top looks cooked
Flip and make plain omlet .. or top with cheese slice and let it melt
Take out.. cut and serve for 2 – 5 year kids..
Recipe #6 – Palak (spinach) paratha
Ingredients:( for #6 – spinach paratha )
1 cup – wheat flour ( atta )
1 cup – spinach ( finely chopped )
1 tbsp – ghee
1 garlic – crushed ( small garlic or a small piece)
1/4 tsp – salt
water (as needed to make a soft dough )
oil ( 1 tsp – to coat the dough & 2 tsp for cooking paratha)
Method:
Step 1) Get ready with all the ingredients ..
Step 2) Into a bowl, add 1 cup wheat flour(atta), 1 garlic crushed, 1/4 tsp salt, 1 cup spinach,1/2 tsp ghee ..
Step 3) Add little water at a time and make a soft dough ..
Step 4) Coat with a tsp of oil and make small dough balls ..
Step 5) Dust and roll a dough ball into a thin roti (flatbread) ..
Step 6) Spread a tsp of ghee on top ..
Step 7) Sprinkle some flour, pleat from one end, roll and seal the edges under the dough ball..
Step 8) Dust and roll again..
Step 9) Cook the paratha :
heat tawa/griddle and cook bottom-side for 40 seconds ..
Flip and cook otherside for 40 seconds ..
coat the top with little oil ..
Flip and coat the top with little oil ..
Final flip, cook for 10 seconds and remove from heat..
This paratha is a great choice for fussy littleones ! .. my 2 year old loves ! 🙂 .. can be served for breakfast, lunch or dinner ..
Step 1) Heat appam pan and swirl 1/4 cup appam batter.
Cover and cook for 1 minute .
Step 2) Once the appam is cooked.. remove to a plate..
Sprinkle little raw sugar when warm .. roll and serve ..
note: you can also serve with mild curry or tomato chutney or coconut chutney
Recipe #8 – Rava idli & coconut chutney
Ingredients: ( for rava idli)
1 cup – semolina (idli rava)
1 tbsp – ghee
1 cup – yogurt (thick)
1/4 tsp – mustard seeds
1 tsp – urad dal
1 tsp – chana dal
1/2 tsp – ginger (crushed)
1 tbsp – coriander leaves
1 tbsp – coconut
1/4 cup – water
1/4 cup – cashews (chopped)
1/4 tsp – salt
Ingredients: ( for coconut chutney)
1 cup – coconut
1/4 tsp – ginger
1/4 tsp – cumin seeds
1 tbsp – coriander leaves
5 – shallots (small onion) or 1 tbsp onion
1 cup – water
tiny piece – tamarind ( or 1/2 tsp lemon juice)
salt to taste
For tadka/garnish:
2 tsp – oil
1/4 tsp – mustard seeds,
some curry leaves
1 dried red chilli
Method: ( Coconut chutney )
Step 1) Into a blender, add the coconut, cumin seeds, shallots, ginger, coriander leaves, tamarind, salt
Step 2) Pour 1 cup water and blend until fine ..
Step 3) Heat a pan and pour 2 tsp oil ..
Step 4) Add 1/4 tsp mustard seeds, 1 dried red chilli and some curry leaves..
Step 5) Pour the ground coconut chutney and heat on medium-heat just until off boil (just before boiling). ( Do not boil..) Turn off the heat and remove from heat.
