Iftar snack Crunchy Chicken balls

Ramadan Special recipe .. crunchy Chicken balls

Ingredients: ( for crunchy chicken balls )

Chicken mince – 500 gms ( 1 kg for bulk freezing )
onion – 1 small ( finely chopped )
ginger garlic paste – 1 tsp
turmeric powder – 1/2 tsp
chilli powder – 1 tsp
coriander powder – 2 tbsp
salt – 1 tsp ( or to taste )
coriander leaves – 1/4 cup ( chopped )
rice flour – 1/2 cup ( or maida or all purpose flour )
lemon or lime (fresh) – half ( or 1 tbsp juice )
egg – 1
bread crumbs – 2 cups ( or as needed )

Make spice powder with:
3 cardamoms, 3 cloves, 1 dried red chilli,
1 tbsp – pepper, 1 tbsp – fennel seeds (saunf)

Method:

Step 1) Make fresh spice powder:
Into a dry grinder or blender, add 3 cardamoms, 3 cloves, 1 dried red chilli, 1 tbsp – pepper, 1 tbsp – fennel seeds (saunf) and powder until fine

Step 2) Add the fresh powder to the chicken mince. Add below ingredients and mix well and combine to a dough.


onion – 1 small ( finely chopped )
ginger garlic paste – 1 tsp
turmeric powder – 1/2 tsp
chilli powder – 1 tsp
coriander powder – 2 tbsp
salt – 1 tsp ( or to taste )
coriander leaves – 1/4 cup ( chopped )
rice flour – 1/2 cup ( or maida or all purpose flour )
lemon or lime (fresh) – half ( or 1 tbsp juice )

Step 3) Make small balls and arrange on a plate or foil. I packed these for freezing ( please see video )

Step 4) To fry frozen balls:

  • Place the frozen balls on a plate
  • Microwave for 30 seconds or a minute to thaw the ice. This will prevent splattering while frying

Step 5) Deep fry in hot oil until golden. Serve with your favourite sauce.. and enjoy 😀

Makhana Cereal & Porridge baby food

Makhana Cereal ( for 8 – 12 months baby ) & 3 ways to prepare MAKHANA PORRIDGE for baby ‘ ( phool makhana – fox nuts)

Ingredients: ( for makhana cereal )

makhana – 200 gms
( also known as ‘ phool makhana ‘ , ‘fox nuts ‘
Euryale ferox, lotus seeds and gorgon nuts)

Method:

Step 1) Cut the makhana into 2 pieces and check for worms or fungus inside. Should be clean inside ( please see video for a clear idea ).. Discard the ones that has spots, worms or fungus inside

Step 2) Heat a pan and roast the makhanas on medium heat. Keep turning until golden .. takes 3 – 4 minutes. Once golden, check if ready by crushing 1 makhana piece between your fingers. If cracks into pieces and when further crushed turns into powder, it’s ready ( Please see video for this step )

Step 3) Once done, transfer the makhanas to a plate and let it cool for 20 minutes before grinding.


Step 4) Grind the makhanas into a fine powder. Add the powder to a colander or strainer and sieve the flour into a bowl.

Step 5) Transfer the flour into a clean jar and makhana cereal ready .. You can use this up to 2 months

To prepare porridge

Recipe #1 – Makhana Porridge

Ingredients:
Makhana cereal – 1 tbsp
Hot water – 1/2 cup

Method:

  • Boil 1/2 cup water
  • Into a bowl, add the Makhana cereal. Slowly pour the hot water and make a thick porridge. Makhana porridge ready ..

Recipe #2 – Makhana Banana Porridge

Ingredients:
Makhana porridge
mashed banana – 2 tbsp

Method:

  • Prepare makhana porridge like in recipe #1
  • Add 2 tbsp mashed banana and mix well. Makhana Banana Porridge ready ..

Recipe #3 – Makhana Date porridge

Ingredients:
Makhana cereal – 1 tbsp
Water – 1/2 cup
Dates- 1/2 (finely chopped )

Method:

  • Into a sauce pan, pour water, add the chopped date pieces and bring it to a boil
  • Mash the dates and turn off the heat
  • Into a bowl, add 1 tbsp makhana cereal.
  • Add the hot dates water and mix. Make a thick porridge. Makhana Date porridge ready ..
