little oil – ( to coat the foil and drizzle on top of fish)
To marinate the fish:

1 tsp – fennel powder
1/2 tsp – garam masala powder
1/4 tsp – pepper powder
2 tsp oil
salt to taste
To coat the fish:
1/4 cup rice flour
1/4 tsp salt
1/8 tsp pepper
1/4 tsp chilli powder
Method:
Step 1) Rinse the fish fillet, cut them into small bite-size pieces ( 1″ cubes ) and place on a kitchen tissue for 5 minutes to remove excess water.
Step 2) Marinate the fish fillet with ‘ to mariante the fish ingredients ‘ ( turmeric, chilli, coriander, fennel, garam masala, pepper, oil, salt) and keep aside for 5 minutes..
Step 3) Preheat the Oven to 200 C / 400 F. Line a baking tray with foil and grease with a tsp of oil ( or use a parchment paper )
Step 4) Prepare the fish coating with ‘ to coat the fish ingredients ‘. ( In a bowl, add the rice flour, salt, pepper, chilli powder and mix )
Step 5) Coat the fish fillet pieces in the rice flour mixture ( 8 – 10 pieces at a time ) and arrange on the greased foil. Once the fish pieces are arranged in foil, drizzle a tsp of oil on top..
Step 6) Bake at 200 C / 400 F for 12 – 15 minutes or until golden orange with slightly browned edges…
note: do not brown it fully, look for random light-brown edges or spots ..
Step 7) Once ready, take them out and let it sit in the foil for 2 – 3 minutes.. slowly release the baked fish from the foil and place on a serving dish..
Serve it HOT with any sauce of your choice or just MUNCH them as I always do :)..
You can use any white fish fillet for this recipe .. my first choice is snapper and next is grouper ;).. What is your favourite fish fillet ? .. feel free to share here :)..
