Ingredients: ( for beetroot dates halwa )
Dates – 150 gms ( or 12 mejdool dates ) ( deseeded & finely chopped )
Raisins – 1 tbsp. ( chopped )
Cashews – 1/4 cup ( or 60 gms ) ( finely chopped )
pistachios – 1/4 cup ( or 60 gms )
Beetroot – 400 gms ( peeled & grated )
Ghee – 1/4 cup ( or 70 ml )
milk or cream – 1/2 cup ( or 140 ml )
cardamom powder – 1/8 tsp ( 2 pinches )
Method:
Step 1) heat a small pan and roast the pistachios for 1 minute. Transfer to a plate and let it cool for 10 minutes. Grind to a powder and keep aside.
Step 2)
- Heat a big fry pan
- Add the ghee
- Add chopped cashews and fry for a minute
- Add the grated beetroot and cook for 8 – 10 minutes on medium-heat until semi-fried.
- Add the finely chopped dates and raisins and mix for a minute
- Now mash the dates into the beetroot mixture and mix it ( Repeat this 4 times )
- Add the cream ( or full fat milk ) and mix for minute.
- Reduce heat to low.
- Mash and mix ( repeat 4 times – please see video for a clear idea 😀
- Turn off the heat and remove pan
- Place 1/4 cup of halwa in a small serving bowl. Top with powdered pistachios and serve warm or cold.. enjoy 😀
