Ingredients: ( for carrot pancake )
makes 6 medium pancakes
1 egg
1 tbsp – raw sugar ( or regular sugar )
1/3 cup – carrot ( peeled & grated )
1 tbsp – raisin ( finely chopped )
1/2 cup ( or 120 gms ) – all purpose flour (maida)
1/8 tsp – baking powder
3/4 cup ( or 180 ml ) – milk
1 tbsp – ghee or butter
Method:
Step 1) Make Batter
- Into a bowl, add egg, sugar and stir.
- Add all purpose flour ( maida / plain flour ), baking powder, grated carrot, finely chopped raisins, milk and mix. Make a thick batter ( please see video for batter consistency 😀
Step 2) Make pancakes
- Heat a tawa or skillet or pancake pan.
- Grease with little oil
- Add 1/4 tsp ghee or butter
- Pour 1/4 cup batter and cook the bottom until light brown ( takes less than 50 seconds )
- Flip and cook other side until golden ( takes 40 seconds ) and remove to a plate.
- Make tiny pancakes for 2+ teeth baby or 1 year toddler. Cut them into small pieces and offer as finger food.
