INGREDIENTS:
Macaroni – 2 Cups
salt – 2 tsp
water – 2 litres
Butter – 1/4 cup ( 60 gms )
flour – 1tbsp
Colby cheese – 300 gms
Mild-cheddar cheese – 200 gms
Mozzarella – 10 balls ( small )
Milk – 400 ml
cream – 100 ml
salt – a pinch
pepper – a pinch
nutmeg powder – a pinch
Method:
Step 1) Cook Macaroni:
Boil 2 litres water, add 2 tsp salt. Add macaroni and cook until soft.. takes 12 – 15 minutes
Step 2) Making Cheese Sauce:
I used 300 gms of Colby cheese, mild cheddar cheese and mozzarella for making the cheese sauce. You can use any cheese of your choice.
- Heat a big pan. Add butter and flour, stir until creamy ( no lumps ).
- Add little milk at a time and stir. Add 100 ml cream ( optional). Heat on medium until boiling.. keep stirring
- Reduce heat to low and add the cheese shreds around 300 gms. stir to dissolve.
- Remove pan from heat and add the seasonings ( a pinch of nutmeg powder, pepper powder and salt )
- Return to heat, add the cooked macaroni and mix for 1 minute on low heat. Turn off the heat
Step 3) Baking Mac & Cheese:
- Preheat Oven to 180 C / 350 F
- In an oven-proof dish, add half of the cooked macaroni, half of the cheese shreds, remaining macaroni on top and remaining cheese shreds. I added some mozzarella cheese balls on top..this is optional
- Bake for 20 minutes or until slightly golden on top
- Once ready, remove from oven and serve warm 😀
For babies and toddlers, cut into small piece and serve.. You can give this recipe for babies starting from 8 months..
