Step 2) Making Cheese Sauce: I used 300 gms of Colby cheese, mild cheddar cheese and mozzarella for making the cheese sauce. You can use any cheese of your choice.
Heat a big pan. Add butter and flour, stir until creamy ( no lumps ).
Add little milk at a time and stir. Add 100 ml cream ( optional). Heat on medium until boiling.. keep stirring
Reduce heat to low and add the cheese shreds around 300 gms. stir to dissolve.
Remove pan from heat and add the seasonings ( a pinch of nutmeg powder, pepper powder and salt )
Return to heat, add the cooked macaroni and mix for 1 minute on low heat. Turn off the heat
Step 3) Baking Mac & Cheese:
Preheat Oven to 180 C / 350 F
In an oven-proof dish, add half of the cooked macaroni, half of the cheese shreds, remaining macaroni on top and remaining cheese shreds. I added some mozzarella cheese balls on top..this is optional
Bake for 20 minutes or until slightly golden on top
Once ready, remove from oven and serve warm 😀
For babies and toddlers, cut into small piece and serve.. You can give this recipe for babies starting from 8 months..
oil – 1 tsp onion – 2 tsp ( chopped ) Ginger garlic paste – 1/4 tsp Turmeric powder – a pinch Coriander powder – a pinch Cumin powder – a pinch Fennel powder – a pinch Coriander leaves – 2 tsp ( chopped ) Tomato – half ( chopped ) Meat mince – 100 gms Potato – 1 ( small – chopped ) Oats – 1 tbsp Water – half cup ( 150 ml )
METHOD:
Step 1) Heat a pan, pour oil. Add onion and mix. Add ginger garlic paste and mix
Step 2) Add turmeric powder and mix. Add meat mince and mix for a minute on high-heat
Step 3) Add coriander powder, cumin powder, fennel powder and mix. ( add a pinch of salt for 12+ months babies only )
Step 4) Add tomato and mix. Add the potato, coriander leaves and mix.
Step 5) Pour half cup water, cover and bring it to a boil. Once it starts boiling, reduce to low and cook for 13 minutes ( until the potatoes are soft )
Step 6) Add the oats. Mix, cover and cook for 2 minutes on low heat. Turn off the heat
Meat mince meal for baby is ready.. Transfer to a plate.. Mash the potatoes when hot.. Feed when slightly warm..

LUNCH – Cauliflower Rice
INGREDIENTS: for cauliflower rice Cauliflower – 2 cups Coconut – 1/4 cup Water – 2 tbsp Ginger – 1 piece Garlic – 3 Oil – 2 tsp ( or ghee ) Onion – 2 ( chopped ) Coriander leaves – 2 tbsp Rice – 1 cup Water – 2 cups Salt to taste Turmeric powder – 1/4 tsp Pepper powder – a pinch Eggs – 4 ( optional )
DINNER – Carrot Paratha
INGREDIENTS – for Carrot Paratha Carrot – 1 ( grated ) Avocado – half ( mashed ) Atta ( wheat flour ) – 2 Cups Water – as needed to make soft dough Salt – 1/4 tsp Oil – 1 tsp Ghee – as needed ( for cooking carrot paratha )
