Kale Rice Recipe

Ingredients: ( for kale rice recipe )

kale leaves – 2 cups ( finely chopped )
carrot – 1 ( big ) grated or chopped fine
garlic – 1 ( crushed or paste )
cumin seeds – 1/4 tsp ( crushed or powdered )
turmeric powder – 1/4 tsp
chilli powder – 1/2 tsp
salt – to taste
ghee – 1 tbsp
cashews – 1/4 cup ( 60 gms )
raisins ( kismis ) – 1/4 cup ( 60 gms )

To cook rice:
green chillies – 2
coriander leaves – 2 tsp
salt to taste
pepper – 1/4 tsp
cinnamon – 3″ , cadamoms – 2 , cloves – 3
Basmati rice – 2 cups ( 500 gms )
water – 3 cups ( 750 gms )
ghee – 2 tbsp

Method:

Step 1) Heat a big sauce pan to cook the rice.

  • Add ghee, cardamom, cloves, cinnamon stick, coriander leaves, green chillies, rice , water, salt & pepper.
  • Cover and bring it to a boil.
  • Once it starts boiling, reduce to low and cook for 8 minutes.

Step 2) Make the kale mixture:

  • Heat a big pan or wok
  • Add ghee.
  • Add garlic & fry 20 seconds
  • Add carrot and cook for 2 minutes
  • Add kale leaves, salt and cook for 5 minutes or until the kale is fully cooked.
  • Add crushed cumin seeds, turmeric powder, chilli powder and cook for a minute
  • this is optional ( but adds a nice flavour & makes a filling meal ) – move the mixture aside, add 1 tsp ghee, add cashews & fry thill golden, add raisins and fry until the raisins balloon. mix everything together
  • Turn off the heat
  • Add the cooked rice and gently mix to coat the rice with the kale mixture.

Delicious Kale rice is ready.. Enjoy when hot 😀

aval poha porridge for 8 – 12 months baby

Ingredients: ( for aval/poha porridge for baby )

aval (poha) – 1/2 cup ( or 100 gms )
ghee -1 tsp
banana – half (mashed – any ripe banana)
water – 1 cup & 1/2 cup

Method:

Step 1) Take 1 cup water in a bowl. Add the aval (poha) and soak for 30 seconds. Remove any husk from the water. Takeout the soaked poha (aval) to another bowl. Mash it with a spoon & keep aside

Step 2) Heat a sauce pan. Add ghee. Add the mashed banana and cook on low-heat for 20 seconds

Step 3) Add half cup of water and bring it to a boil. Add the mashed aval (poha) & cook for 4 minutes on low heat.

pour the aval (poha) porridge to a bowl. Feed when warm. ( optional – add 2 tsp of baby milk powder ( infant formula ) for a creamy taste.

oats apple porridge for 7 – 12 months baby

Ingredients: ( for oats apple porridge recipe )

oats – 2 tbsp
apple – half ( peeled &chopped )
water – 1 & half cup

Method:

Step 1) Heat a pan, add the oats and roast for 2 minutes. Add to a plate. Let it cool for 5 minutes.

Step 2) Grind the oats until fine. Keep aside

Step 3) Take a sauce pan, add the apple pieces and half cup water. Bring it to a boil

Step 4) Once it boils, reduce to low and cook for 10 minutes

Step 5) Mash the apple pieces, pour 1 cup water & bring it to a boil.

Step 6) Once it boils, reduce heat to low. Add the oats powder and mix and cook fro 1 minute. turn off the heat

Pour into a bowl. Feed when warm ..

dal dalia khichdi powder 7 – 24 months baby

Ingredients: ( for Dal Dalia Khichdi powder )

dalia ( broken wheat ) – 1 cup ( 250 gms ) ( also known as cracked wheat / samba rava /
godhuma rava / Lapsi / Fada / Bulgar
dal ( moong dal ) – 1/2 cup ( 150 gms )

Method:

Step 1) Quickly rinse the dalia and drain well.

Step 2) Heat a pan and roast the dalia until dry. ( takes 4 – 5 minutes on medium heat).
Test if done, by eating some. If it’s crispy, remove from heat and transfer to a plate

Step 3) Now, quickly rinse the dal and roast on same pan until dry and golden. ( takes 3 – 4 minutes ). Test if done by eating some dal. If it’s crispy, remove from heat and transfer to a plate.

Step 4) Let the dalia & dal cool for 15 minutes

Step 5) Time to grind:

  • Mix dal & dalia
  • Add small batches to a grinder
  • Grind until fine
  • Add to an airtight container.
  • Shake the box ( sideways) to see any unground pieces. It will appear on top. Remove the unground pieces and add to the grinder and powder until fine. Add to the dal dalia powder box.
  • Let it cool for 10 minutes if hot.
  • Cover with the lid and use up to 2 months.

Apple custard recipe

Ingredients: ( for apple custard recipe )

apple – 1 ( peeled & chopped fine )
milk – 500 ml ( 2 cups )
egg yolk – 1
almond powder – 1 tbsp
rice flour – 1 tbsp ( or any flour )
raw sugar – 4 tbsp

Method:

Step 1) Cooking apple:

  • Take a pan, add the finely chopped apple and 2 tbsp raw sugar.
  • Heat on medium-high.
  • Once it starts heating up, reduce to low and cook for 5 minutes ( note: during this 5 minutes cooking time, you will see the sugar melting ..)
  • Turn off the heat and keep aside.

Step 2) Making custard:

  • Take a medium or big sauce pan
  • Add the egg yolk, almond powder, rice flour ( or any flour), 2 tbsp raw sugar, little milk (1/2 cup ) and mix well. ( making sure, no lumps and all mixed well )
  • Add the remaining milk and mix for 20 seconds.
  • Heat on medium-high and bring it to a boil. Keep stirring ( or it will scorch at the bottom )
  • Once you see the edges boiling, reduce heat to very low and continue cooking for another 8 minutes ( remember to keep stirring as this can easily scorch at the bottom )
  • Add the cooked apple and cook for 2 minutes ( keep stirring ) and turn off the heat.
  • Pour into the bowls or ramekins.. enjoy warm or refrigerate for 4 hours or overnight for a cold custard.. I loved both .. warm & cold 😀

rice & dal porridge recipe for 6 – 12 months baby

Ingredients: ( for rice & dal porridge )

Rice – 1 tbsp
dal ( moong dal ) – 1 tbsp
water – 3/4 cup

Method:

Step 1) wash & soak the rice & dal for 10 minutes

Step 2) Take a small blender, add the soaked rice and dal with 1/4 cup ( or 4 tbsp ) water and grind for a minute

Step 3) Add into a sauce pan. Pour water, cover and bring it to a boil.

Step 4) Once it starts boiling, mix for 10 seconds. Cover and cook on low-heat for 10 minutes.

Rice & dal porridge ready.. pour into a bowl and feed.

Optional – you can also add 1/4 tsp ghee ( or 4 – 5 drops ) when hot, mix and feed

Tips:

  • How much to feed:
  • For 6 months baby = 1- 2 tsp starting week ( later 1 tbsp )
  • For 7 months baby = around 3 tbsp ( or 1/4 cup )
  • For 8 & 9 months baby = around 1/2 cup
  • For 10 – 12 months baby = around 3/4 cup
  • To cook in pressure cooker:
    • I used a small ( 1.5 litres ) pressure cooker
    • Add the ground rice & dal with water. Put the lid on and heat on high
    • Once the steam comes out, place the weight and cook on low-heat for 6 minutes.
    • Turn off the heat. let it sit for 5 minutes.
    • Open and pour into a bowl. feed when warm
  • If too thick, add little boiled & cooled water to adjust the consistency of the porridge.
