3 ingredient chocolate cupcake recipe

Ingredients: ( 3 ingredient chocolate cup cake recipe ( Oven & NO-OVEN method ) )

Oreo biscuits – 2 packets ( or any chocolate biscuits )
milk – 1 cup ( or 250 ml )
baking powder – 1 tsp ( or eno salt )

Method:

Oven Method:

  • Preheat oven to 180C / 350 F for 10 minutes.
  • Grease cupcake liners and place in muffin tray or small oven safe bowls with melted butter or oil.
  • Take a blender, add the oreo cookie or chocolate biscuits and powder until fine
  • Add the powder to a bowl, add milk, add baking powder and make a medium-thick batter ( add little milk at a time if too thick )
  • Pour into the greased bowls or cupcake liner. ( fill 3/4th only )
  • Bake at 180 C / 350 F for 25 – 30 minutes or until puffed and the toothpick when inserted comes out clean.
  • Take out and enjoy 😀

No-Oven Method:

  • Take a big deep pan or pressure cooker. Place a stand or big steel plate inside. Cover and heat on high for 4 minutes.
  • Grease small steel bowls or heat safe bowls with melted butter or oil.
  • Pour the batter ( fill 3/4th only )
  • Place inside the hot pan. Cover and cook on medium-low heat for 25 – 35 minutes until doubled in size and a toothpick when inserted comes out clean
  • Take out when ready and enjoy your delicious chocolate cupcakes ..

Steamed Egg Custard ( for 1 year babies / toddlers )

Ingredients: ( for steamed egg custard for 1 year babies / toddlers )

eggs – 2
milk – 1 cup ( 250 ml )
sugar – 2 tsp ( or jaggery )
vanilla essence – 1/4 tsp

Method:

Step 1) Heat the steamer with enough water.

Step 2) Into a bowl, beat 2 eggs and keep aside

Step 3) Into a sauce pan or tea pan, add milk, vanilla and sugar. Heat on high for 3 minutes or until boiling. Remove from heat.

Step 4) Immediately, pour into the egg mixture and whisk well for 10 seconds. Strain into a filter and pour into small steel bowls or heat safe bowls.

Step 5) Place the bowls in the hot steamer. Cover and heat on high for 1 minute. Reduce to medium and steam for 20 minutes.

Remove the bowls. Let it sit for 10 minutes. Carefully, run a knife around the custard. Place a plate on top and flip it. Slowly, remove the bowl.. delicious custard is ready !

Mango Ice-cream Shake recipe

Ingredients: ( for mango ice-cream shake )

Mango – 1 ( peeled & cut )
Banana – 1
vanilla ice-cream – 2 scoops
milk – 2 cups ( or 500 ml )

Method:

Step 1) Take a blender, add the mango, banana pieces. Add 2 – 3 ice cream scoops ( vanilla or mango flavour ). Pour milk ( 2 cups or 500 ml ) and blend 1 minute.. delicious shake ready !

Pour into glasses and enjoy 😀

Pizza in a bun recipe

Ingredients:

For Pizza dough:
1 cup – All purpose flour ( maida )
Yeast – 1 tsp
water – 1/2 cup ( and as needed )
salt – 1/4 tsp
sugar – 1 tsp
oil – 2 tsp

For Pizza sauce:
Tomato – 2 ( chopped )
garlic – 1 ( chopped fine )
oil – 1 tsp
salt – 1/4 tsp
tomato sauce or ketchup – 2 tbsp
parsley or coriander leaves – 1 tsp

For topping:
bell pepper (capsicum )
cheese
any favourite toppings you like

Method:

Step 1) Make Pizza dough:

  • Into a bowl pour lukewarm water and add the yeast. Let it sit for 5 minutes
  • Add the flour, salt and make a medium-soft dough
  • Coat with little oil. Cove rand let it sit for 1 hour or until double in size

Step 2) Make Pizza Sauce:

  • Heat a pan on medium
  • Pour oil. Add garlic, tomato. Cover and cook until the tomato softens ( takes 3 – 5 minutes )
  • Add the ketchup or tomato sauce, salt, coriander or parsley leaves and mix.
  • Cook until the sauce thickens. Turn off the heat

Step 3) Make Pizza buns:

  • Punch the pizza dough and make 5 – 6 dough balls of equal size
  • Sprinkle some flour on the rolling surface. Roll 1 dough ball into a medium-sized flatbread
  • Keep 2 tsp of pizza sauce in the centre. Add your favourite toppings. I added cheese, bellpepper (capsicum), jalapeno in the middle. Carefully bring the sides up and make into a ball. Seal the top very well.
  • Place onto a baking sheet lined with foil or baking paper with sealed edge facing down. Do the same for the rest of the dough balls.
  • Bake at 200 C / 375 F for 15 minutes or until golden brown on top ( or until you see brown spots on top )
  • Once ready, take out and enjoy your ‘Pizza in a bun’ 😀

For No-Oven method:

  • Heat a heavy pan or skillet or tawa on high heat for 1 minute. Then reduce to low
  • grease with little oil
  • Place the pizza buns ( sealed edge facing down ). Cover and cook on low heat for 2 minutes.
  • Flip and cover again and cook on low heat for 1 minute. Check if the base is brown, takeout when ready.. Enjoy 😀

Sweet donut balls recipe

Ingredients:
all purpose flour (maida) – 1 cup ( 240 gms )
milk – 3/4 cup ( 180 ml )
yeast – 2 tsp
salt – 1/4 tsp
yogurt – 1 tbsp
pistachios – 1 tbsp ( crushed )

For Sugar Syrup:
Sugar – 1 cup
water – 1.5 cups
rose water – 1/4 tsp

Method:

Step 1) Warm the milk for 20 seconds on low heat. Pour into a big bowl.

Step 2)
Add yeast, cover and let it sit for 5 minutes

Step 3) Add the flour, yogurt, salt and mix. It will be a strechy dough. Cover and let it sit for 30 minutes

Step 4)
Make syrup: Take a sauce pan, add sugar and water. Bring it to a boil. Once it boils, boil on medium-heat for 10 minutes. Pour rose water. Turn off the heat. Keep aside

Step 5) To fry donuts: ( please see the video, for making balls with 2 spoons )
and deep fry until golden. Take out and add to sugar syrup. Coat well. let it soak for 2 minutes and then remove to a bowl. Repeat with the remaining dough.

Step 6) Add some crushed pistachios on top and a tsp of sugar.. enjoy 😀

Rice kheer recipe

Ingredients:

Ghee – 1/4 cup ( 2 Tbsp )
Sugar – 1/3 cup ( 3 Tbsp )
Basmati Rice – 1/2 cup or 100 gms
MIlk – 3 cups ( or 750 ml )
Cream – 250 ml ( or 1 cup )
Pistachios – 1/4 cup ( or 2 Tbsp )
Cashew – 1/4 cup ( or 2 Tbsp )
Cardamom (elaichi ) – 3

Method:

Step 1) Heat a pan, pour ghee.
Step 2) Add the cardamoms, pistachios, cashews and fry for 1 minute
Step 3) Add the basmati rice and mix for a minute
Step 4) Pour the milk and bring it to a boil ( keep stirring ). Once it starts boiling, reduce to low and and cook for 30 minutes ( stir every 5 minutes )
Step 5) Mash using a spoon or a potato masher.
Step 6) Pour the cream ( if too thick, add more cream or milk ) and mix.
Step 7) Add sugar and cook on low for 5 minutes. Turn off the heat

Pour into the bowls and enjoy warm or cold 😀 ..
