5 Tasty Evening Snack Ideas for kids

 

 

RECIPE #1 – Cheesy Bread Sticks

Ingredients: ( for #1 – Cheesy bread sticks )
10 – Bread slices (edges trimmed)
10 – cheese sticks ( any finger cheese )
1/4 cup – tomato ketchup
1 cup – bread crumbs
oil – for frying

Make a coating batter with :
1/2 cup – All purpose flour (maida)
3/4 cup – water

Method:

Step 1) Trim the edges of the bread slices

Step 2) Take 1 bread slice, spread some ketchup in the centre ( for adults, you can use chilli sauce). Brush the sides of the bread using little water.

Step 3) Place a piece of cheese stick on one end of the bread and roll it up. Seal the edges well. repeat for all the bread slices

Step 4) To make a coating batter: Into a bowl add, 1/2 cup all purpose flour and 3/4 cup water and make a medium-thick batter.

Step 5) Dip the bread pieces into the batter and roll it on bread crumbs. Repeat with all bread rolls.

Step 6) Deep fry 2 – 3 at a time until evenly golden. Remove onto a kitchen tissue. Enjoy with your favourite sauce !

RECIPE #2 – Parippu vada ( chana dal pakoda )

Ingredients: ( for #2 – Parippu vada )
1 cup – chana dal ( soaked 5 hours or overnight)
1/4 cup – urad dal ( urid/manh ki dal ) ( soaked 5 hours or overnight )
1 tsp – ginger
1/4 cup – onion (chopped) or small red onions
1 greenchilli
1 tsp – cumin seeds
1 tsp – curry leaves ( chopped )
pinch – turmeric powder
1 tsp – coriander powder
salt to taste
oil – for deep frying

Method:

Step 1) Keep 1/2 cup of soaked chana dal aside and add the remaining chana dal into a blender.

Step 2) To this, add the soaked urad dal, ginger, onion, cumin seeds, greenchilli and pulse into a coarse paste

Step 3) Add the coarse paste into a bowl. To this, add turmeric powder, coriander powder, salt and chopped curry leaves. Mix well.

Step 4) Add the saved 1/2 cup soaked chana dal and mix.

Step 5) Scoop using shallow spoon and deep fry until golden. Serve hot ..

RECIPE #3 – Paneer Puff

Ingredients: ( for #3 – Paneer puff )
1 cup – vegetables chopped ( carrot, corn,
beans, peas )
100 gms – paneer (small cubes)
puff pastry sheets – ( cut into 5*5 squares )
1/4 tsp – turmeric powder
1/4 tsp – chilli powder
1/2 tsp – salt
1/4 tsp – coriander powder
1/4 tsp – fennel powder
1 tbsp – coriander leaves
1 tbsp – oil

Method:

Step 1) Heat a pan, pour oil. Add the vegetables and cook until soft. Add the paneer, spice powders, salt, coriander leaves. Mix and cook for 1 minute. Remove from heat

Step 2) Cut the puff pastry sheets into 5*5 squares. Place some paneer mix in the centre. Bring the edges together and seal well using a fork. Continue with the remaining pastry sheets.

Step 3) To cook without oven: Take a deep pan or pressure cooker, add 1 cup salt. Place a tall stand. Cover and heat on high for 5 minutes. Place the puff pastry sheets onto a greased steel pan and place inside the cooker. Cover and heat on high for 2 minutes. Reduce to medium and cook for 10 minutes. Open and flip the puff’s. Cover and cook again for 5 minutes. Take out the paneer puff and enjoy ..

Step 4) For Oven cooking: Place the puff pastry into a lined baking sheet and bake at 180C or 350F oven until golden ( takes 10 – 14 minutes) ..

RECIPE #4 – Caramel Bread Pudding

Ingredients: ( for #4 – Caramel Bread Pudding )
2 – bread slices (edges trimmed)
1 tbsp – ghee
2 cups ( or 500 ml ) – milk
1 – egg ( skip if you don’t want to )
1 tbsp – sugar

For caramel:
1/2 cup – sugar
2 tbsp – water

Method:

Step 1) Fill the steamer or pressure cooker with water and bring it to a boil.

Step 2) Grease a steel pan or cake pan ( that fits into the steamer ) with ghee or melted butter

Step 3) Take a pan, add 1/2 cup sugar, 2 tbsp water and bring it to a boil Let it boil for 2 minutes and pour into the greased pan. Let the caramel cool for 10 minutes.

Step 4) Into a blender, add the bread slices and pulse 4 times until coarse. Add to a big bowl

Step 5) To the blender, 2 cups milk, 1 egg, 1 tbsp sugar, 1 tbsp ghee, pinch of cardamom powder and blend for 30 seconds. Pour into the same bread bowl. Mix well.

Step 6) Place the caramel pan into the steamer or pressure cooker and pour the milk & bread mix on top.

Step 7) Cover and heat on high for 4 minutes. Reduce to medium and cook for 22 minutes.

Step 8) Remove from steamer and let it sit for 15 minutes. Keep a plate on top and flip the pudding. Slowly, release the pan.. Cut & enjoy πŸ˜€

1 cup or 250 gms – all purpose flour ( maida or plain flour)

2 eggs

Method:

Step 1) Heat pan and pour oil or ghee

Step 2) Add the chopped potato and cook for 3 minutes

Step 3) Add the peas and cook for 3 minutes

Step 4) Add the chopped spinach and cook for 2 minutes

Step 5) Add salt, pepper, turmeric powder and mix

Step 6) Pour beaten egg and scramble.. cook until firm and takeout to a plate

1 egg
pinch – salt
pinch – pepper
pinch – turmeric powder
1 tsp – coriander leaves (chopped)
1 tsp – oil or ghee
1 tbsp – onion ( finely chopped )
1 medium – tomato (finely chopped)

Method:

Step 1) Into a bowl, add egg, salt, pepper, turmeric powder and coriander leaves.. Beat well and keep aside

Step 3) Add chopped onion and cook until soft

Step 4) Add chopped tomato and cook until soft

Ingredients:
( for Ragi malt powder )

1 cup or 200 gms – Ragi powder (finger millet)
1/2 cup or 100 gms – cocoa powder
1/2 cup or 100 gms – raw sugar
25 almonds ( powdered in dry grinder )

Method:

Step 1) Into an airtight container add all the ingredients ( ragi powder / finger millet powder, cocoa powder, raw sugar, almond powder ) and mix well .. Ragi MAlt powder ready πŸ˜€ .. close with the lid and use upto 2 months ..

Step 2) To prepare ‘ ragi malt drink ‘ ( for 1 serving ) :

  • Into a pan, add 1/4 cup water
  • Add 2 tsp ragi malt powder ( we just made ) and stir until combined ( no lumps )
  • Pour 1 cup or 200 ml milk and stir
  • Heat on high and bring it to a boil ( keep stirring to prevent scorching at the bottom )
  • Once it starts boiling, reduce to low and stir for 2 minutes
  • Remove from heat and pour into a cup .. Serve when warm πŸ˜€ .. This is great for picky toddlers & kids who refuse to drink milk ..

Nankatai ( Indian cardamom cookies recipe ) NO-OVEN

 


Ingredients:
( for nankatai – cardamom cookies )

1 cup or 250 gms – all purpose flour ( maida or plain flour)

note: If too thick, add a tsp of ghee or milk and make a thick dough ( like cookie dough )

Step 3) Take a small amount of dough, shape it into a ball with your palms and gently press with your thumb in the centreΒ  ( to give a a flat look on top ) and arrange on a greased cookie (nankatati ) tray

note: you can shape the cookie however you like πŸ™‚

Step 4) To Bake in Oven : Preheat Oven at 180 C or 350 F for 10 minutes. Bake the cookies for 12 minutes ( don’t let it brown.. should look like a mix of white and golden hue on top )

Step 5) To Bake without oven: ( please see video for clear idea πŸ™‚

  • Take a big pressure cooker or a deep heavy pan
  • Add 1 cup salt or sand
  • Place a tall stand inside
  • Place the lid on top and heat on high for 5 minutes
  • Place the cookie pan
  • Place the lid on top and heat on high for 4 minutes
  • Reduce to medium and cook for 10 minutes only
  • Remove the cookie pan and quickly takeout the cookies to a plate ( or the base of the cookies/nankatais will burn )

1/2 tsp – turmeric powder
1/2 tsp – chilli powder

1 tbsp – coriander leaves ( chopped)
salt to taste

Parata dough / roti dough ( to make 10 parathas )


Method:

Step 1) Get ready with all the ingredients

Step 2) Heat a pan and pour 1 tbsp oil

Step 3) Add 1 chopped onion, 1/2 tsp chopped ginger and cook until soft ..

Step 4) Add 1 cup chopped mushroom and mix..

Step 5) Add salt and cook for 5 minutes on medium-heat ( until the mushroom shrinks and becomes soft)

Step 6) Add the spice powders and mix..

To make aloo mushroom paratha:

  • Roll a small dough ball into a paratha (roti/flat bread)

  • Heat a tawa/griddle and cook the mushroom paratha until brown on bottom
  • Flip, add some ghee on top and cook until other side browns
  • Flip again, add some ghee on top.. press and cook
  • Final flip.. press and cook for 20 seconds.. remove from heat

Tasty ‘Aloo Mushroom paratha’ is ready.. Serve with yogurt / curdΒ  ..

1 – onion (sliced)

To marinate chicken:
2 – boneless chicken breast ( cut into 1β€³ pieces )

1/2 tsp – cumin powder, 1 tsp – salt)

To cook pasta:
1 cup – penne (pasta) or (you can also use macaroni)
6 cups – water (to boil) …
1 tsp – salt

Method:

Step 1) Marinate the chicken pieces with salt and (spice powders – turmeric powder, chilli powder, pepper powder, coriander powder, cumin powder )..

Step 2) Boil the water, add salt, penne pasta and cook until the pasta becomes soft ( takes 10 -12 minutes )

Step 3) Heat a pan and pour 2 tbsp of oil ..

Step 4) Add 1 onion, 1 garlic and cook for 2 minutes ..

Step 5) Add the marinated chicken and cook for 10 minutes on medium-heat ..

Step 6) Add 1 cup of bellpepper, brinjal (or zucchini) and cook for 4 minutes on medium-heat ..

Step 7) Add salt, tomato puree and cook for 5 minutes on medium heat ..

Step 8) Drain the pasta, add to the chicken pan and gently mix for 1 minute..

Step 9) Finally, add the parmesan cheese, scatter on top and TURN OFF the heat ..

Ingredients: ( for #7 – ghee lachha paratha )

1 cup – atta ( wheat flour )
1/4 tsp – salt
1 tsp – oil
ghee – as needed
water – as needed

Method:
Step 1) Into a bowl, add 1 cup atta (wheat flour), salt, water as needed and make a soft dough
Step 2) Grease with little oil and make small dough balls
Step 3) Dust and roll into a big paratha (flatbread)
Step 4) Spread some ghee, make 1″ pleats from 1 end to other end .. ( it will become like a straight dough stick ).. now roll from one end to other (like pinwheel) and tuck the edges under ..( you can see the video for this step )
Step 5) Dust and roll again into a paratha (flat bread)
Step 6) Heat a tawa/skillet..Β cook bottom side for 40 seconds or until light brown ..
Step 7) Flip and spread some ghee on top .. Cook other side for 20 seconds or until light brown
Step 8) Flip and spread some ghee on top.. ( Press and cook )
Step 9) Final flip .. cook for 20 seconds and remvoe from heat..

Ghee Lachha paratha ready !.. Serve plain or with yogurt(curd) ..

15 beans – cut into thin 1″ pieces

1 – green chilli ( whole .. do not chop for kids )
1/2 tsp – turmeric powder
1/4 tsp – chilli powder
1 tbsp – coriander powder
pinch – pepper powder
1 tbsp – coriander leaves (chopped)
salt to taste
1 tbsp – oil

To cook noodles:

300 gms – any noodles ( or sphagetti or fettucine or maggi)
8 cups / 1 litre – water
1/2 tsp – salt

Method:

Step 1)
Get ready with all the ingredients
Step 2) Boil 1 litre/8 cups of water, add a tsp of salt, 300 gms noodles and cook until soft..
Step 3) Heat a big pan/wok and pour a tbsp of oil ..
Step 4) Add 1 thinly sliced onion and cook until soft..
Step 5) Add a tsp of ginger-garlic paste and fry for a minute
Step 6) Add thinly sliced carrot(1), beans(15) and cook until soft ..
Step 7) Move to the side, add a tsp of oil, pour 3 beaten egg and scramble until soft ..
Step 8) When the egg starts thickening, mix everything and cook for 1 minute ..
Step 9) Add the spice powders, salt, coriander leaves and cook for 1 minute on low heat ..
Step 10) Drain the noodles and add to the egg-pan
Step 11) Pour a tbsp of oil, mix and fry for 3 minutes on medium-heat and TURN OFF the heat ..

Recipe #1 – Green Beans stirfry

Ingredients: ( for #1 – green beans stirfry )

1 cup – green beans ( cut into 1 inch pieces )
2 tsp – oil
1/4 tsp – turmeric powder
1/4 tsp – coriander powder
pinch – chilli powder
salt to taste

Method:
Step 1) Heat a fry pan and pour 2 tsp oil..
Step 2) Add 1 cup green beans (cut into 1inch pieces) and stirfry until soft ( takes 3 – 5 minutes )..
Step 3) Add 1/4 tsp turmeric powder, pinch of chilli powder, 1/4 tsp coriander powder, salt.Β  Cook for 2 minutes..

Once ready, place on a plate and let it cool .. Serve when slightly warm .. You can serve

Recipe #2 – Cauliflower & Peas stirfry

Ingredients: ( for #2 – cauliflower & peas stirfry )
1 cup – cauliflower ( cut into small pieces )
1/4 cup – peas
2 tsp – oil
1/4 tsp – turmeric powder
1/4 tsp – coriander powder
pinch – chilli powder
salt to taste

Method:
Step 1) Heat a fry pan and pour 2 tsp oil..
Step 2) Add 1 cup chopped cauliflower and cook until soft ( takes 3 – 4 minutes ) ..
Step 3) Add 1/4 tsp turmeric powder, pinch of chilli powder, 1/4 tsp coriander powder, salt.Β  Cook for 2 minutes..
Step 4) Add 1/4 cup peas and cook until soft .. ( takes 3 – 4 minutes ) ..

Once ready, place on a plate and let it cool .. Serve when slightly warm ..

Ingredients: ( for #3 – broccoli fry )
1 cup – broccoli ( cut into small pieces )
2 tsp – oil
1/4 tsp – turmeric powder

salt to taste

Method:

Step 1) Heat a fry pan and pour 2 tsp oil..
Step 2) Add 1 cup chopped broccoli and fry until soft on medium-heat ( takes 4 – 5 minutes ) ..
Step 3) Add 1/4 tsp turmeric powder, pinch of chilli powder, 1/4 tsp coriander powder, salt.Β  Cook for 2 minutes..

Step 4) Once ready, remove from heat .. Serve when slightly warm ..

Recipe #4 – Lady’s finger (okra/bhindi) stirfry

Ingredients: ( for #4 – lady’s finger (okra) fry )

1 cup – lady’s finger (okra/bhindi) ( cut into thin 1 inch pieces )
2 tsp – oil
1 – onion ( chopped )
1/4 tsp – turmeric powder
1/4 tsp – coriander powder
1/4 tsp – cumin powder
pinch – chilli powder or pepper
salt to taste
2 tbsp – water

Method:
Step 1) Heat a fry pan and pour 2 tsp oil..
Step 2) Add 1 chopped onion and cook until soft ..
Step 3) Add 1 cup thinly sliced lady’s finger (okra/bhindi) and cook for 5 – 6 minutes until soft ..
Step 4) Add 1/4 tsp turmeric,1/4 tsp cumin powder, pinch of chilli, 1/4 tsp coriander powder, salt.Β  Mix 1 minute..
Step 5) Add 2 tbsp of water and cook on medium-heat for 5 minutes ( or until it looks dry ) ..

Once dry, take out to a plate and serve when slightly warm ..

Step 4) Add 1/4 tsp turmeric powder, pinch of chilli powder, 1/4 tsp cumin powder, salt.Β  Cook for 2 minutes..
Step 5) Add a tbsp of water and cook on medium-heat for 3 minutes ( or until it looks dry ) ..

Once ready, take out to a plate .. Serve when slightly warm ..

1/4 tsp – coriander powder
1/4 tsp – cumin powder

Step 3) Add 1 cup chopped spinach (palak) or any leafy vegetable and mix.

Step 5) Add 1/4 tsp turmeric powder, 1/4 tsp cumin powder, 1/4 tsp coriander powder, salt. Cook for 3 minutes..

Step 5) Cover and cook on low-heat for 8 minutes ( or until the beetroot becomes soft )

Ingredients: ( for #10 – cluster beans stirfry )

1 cup – cluster beans (guar / kothavara / govar)
(cut into thin 1 inch pieces )
2 tsp – oil
1 – onion chopped
1 sprig – curry leaves
1/4 tsp – mustard seeds
salt to taste
note: Indian names of cluster beans include ( guar, kothavara, kothamara, goruchikkudu, gori kayi, guar-ki-phalli, jhar sim, govar, govari, guanra chhuin, guara-di-phalli )

Method:
Step 1) Heat a fry pan and pour 2 tsp oil
Step 2) Add 1 chopped onion, 1/4 tsp mustard seeds, some curry leaves and cook for 2 minutes ..
Step 3) Add 1 cup cluster beans ( guar / kothavara ) cut into 1 inch pieces and fry for 3 minutes ..
Step 4) Cover and cook on low-heat for 10 minutes or until it becomes soft ..
Step 5) Add salt to taste, fry for 2 minutes and turn off..

Once ready, takeout to a plate.. Serve when slightly warm ..
