Chicken Shallow Fry Recipe
This is one such chicken recipe that you would definitely be tempted to make quite often as it is easy to make, temptingly deliciouSSS and 100% kids approved !! … not all the tastiest recipes have to be tedious ;)… enjoy…
Ingredients:
1 chicken cut into (10 -12 pieces)
1 big lemon juice
2 tsp fresh ginger garlic paste ( make with 5 garlic and 1.5″ ginger piece)
1/2 cup chopped coriander leaves
6-8 green chilli
For the marinade:
1 cup yogurt (thick)
1 tsp salt (or to taste)
1/2 tsp turmeric powder
1.5 tsp chilli powder
1/2 tsp black pepper powder
1 tablespoon coriander powder
3/4 tablespoon fennel powder
1 tsp garam masala powder
Method:
Step 1 : Clean the chicken pieces and drain the excess water. Make 2-3 slits on the chicken pieces and place them on a shallow bowl.
Step 2 : Pour 1 big lemon juice over the chicken and mix well. Let sit for 2-3 minutes.
Step 3 : Make the marinade – In a bowl, add 1 cup yogurt (thick), 1 tsp salt,
1/2 tsp turmeric powder, 1.5 tsp chilli powder, 1/2 tsp black pepper powder,
1 tablespoon coriander powder, 3/4 tablespoon fennel powder,
1 tsp garam masala powder and mix to a medium-thick paste. (If it is too thick, add little yogurt at a time and mix to get the medium-thick paste). Check salt and add if needed,
Step 4: Add 2 tsp fresh ginger-garlic paste to the chicken and mix well.
Step 5: Pour the marinade over the chicken and coat well… Cling wrap the bowl and let sit for 10 – 15 minutes.
Step 6: Heat a wide shallow pan and add the marinated chicken pieces and evenly distribute the chicken across the pan. Cover and heat on high for 1 – 2 minutes.
Step 7: Once the chicken is heated up and the marinade bubbles, open the lid and mix on high heat for a minute.
Step 8: Cover the pan and cook on medium heat for 5 minutes.
Step 9: Finely chop the coriander leaves and cut the chilli into two if too long.
Step 10: Now open the lid and cook uncovered on medium-high heat until the gravy becomes thick (but not too thick) by mixing every 1-2 minute. (This takes about 8-15 minutes depending on the water content in the chicken and marinade)
Step 11: Once the gravy becomes thick, pour 1/4 cup of oil and mix well. Let it fry on same heat for 5 minutes. (keep mixing every 30 seconds to prevent the marinade from scorching at the bottom of the pan)
note : if the marinade becomes light brown within the said amount of time, reduce the heat to low and proceed with next step.
Step 12: Once the oil starts leaving the chicken, add the green chilli and fry on low heat for 2-3 minutes.
Step 13: Add the chopped coriander leaves, mix well and cook for 2 more minutes.
Step 14: Turn off the heat and let sit for 10 minutes before serving..
I served with appam . This recipe goes well with ghee rice, dosa, chappati or any flat breads…
