Egg Bhajji / Egg fritters / Battered Egg fry
I am proudly presenting you with one of my delicious hometown snacks – EGG BHAJJI
a real treat for your taste buds as you would just irresistibly snack one after another :D..
The recipe sounds very simple ‘ sliced boiled eggs dipped in batter and deep fried ‘…
mm..well, you may not know until you start frying it ! Follow the steps carefully and start frying ;)..
Ingredients: ( serves 3 – 4 )
oil – for deep frying
For the batter :
3/4 cup besan flour / chickpea flour,
1 tbsp rice flour,
1 tbsp corn starch,
1/2 tsp salt,
1/2 tsp turmeric powder,
1/2 tsp chilli powder
3/4 tsp fennel powder
1/2 tsp garam masala powder (any spice-mix of your choice)
1/4 tsp pepper powder
1/8 tsp asafoetida / hing
optional – 1/4 tsp baking soda
Method:
Step 1) Boil the eggs
note: the yolk should be fully cooked
Step 2) Slice the eggs 1/3 inch thick. You would get 4 – 5 slices from one boiled egg.
note: gently cut round slices from top – see the video for a clear idea :)..
Step 3) Into a shallow bowl, add the ‘ for the batter ‘ ingredients and make a
thick batter by adding little water at a time.
(note–> important: you will need thick batter to coat the eggs well or the yolks will burst while frying !!! ) no worries.. my video will guide you ;)..
Step 4) Heat enough oil for deep frying. Test the oil by dropping a tsp of batter and if the batter fries and rises up within 1 – 4 seconds then the oil is ready for frying. Once the oil is hot, set the heat to medium.
Step 5) Once the oil is hot enough, gently dip one egg slice in the batter with a help of a tablespoon and coat it thoroughly by flipping the egg 2 – 3 times gently with the spoon. Spoon the coated egg-slice and carefully slide into the hot oil.
note: safety tip: After dropping one egg-slice into the hot oil, step away and watch if the egg slice is frying without bursting for the intial 30 seconds… If it bursts, then you may have to thicken the batter conistency. For this, add little besan/chickpea flour at a time to make a thick batter, coat the egg slice thouroughly and test again.
Step 6) Add 2 – 3 coated egg slices at a time and deep fry. After 30 – 35 seconds, slowly flip the egg to fry the other side for another 30 – 35 seconds or until golden brown and take out to a kitchen towel.
Step 7) Repeat with rest of the egg slices, and remember to fry 3 – 4 slices at a time.
Step 8) Egg bhajj is ready, … now, it’s your turn to taste ;)..
