Egg Custard Recipe ( Baked and Stirred Method )

Baked ( Oven ) method
Ingredients: ( for Egg Custard – Oven method )
3 – eggs
300 ml – cream ( or full fat milk / thick milk)
1/3 cup – sugar
1 tsp – vanilla extract ( or 1/4 tsp vanilla bean paste )
300 ml – cream ( or full fat milk / thick milk)

1 tsp – vanilla extract ( or 1/4 tsp vanilla bean paste )
Method:
Step 1) Get ready with all the ingredients
Step 2) Preheat the Oven to 180 C / 350 F ..
Step 3) Into a saucepan, add the cream, sugar, vanilla and stir and heat on high until off boil ( just before boiling )..
Step 4) Once the cream is hot and about to boil, turn off the heat
Step 5) In another bowl, beat the eggs, pour the hot cream, stir and strain using a sieve or colander
Step 6) Pour into ramekins ..( placed inside a deep baking tray ) .. ( Fill 3/4th per cup )
Step 7) Fill half of the baking dish with HOT water ( careful not to pour inside the custard ramekins ) ..
Step 8) Bake at 180C / 350F for 20 minutes or until the top looks puffed and slightly browned ..
Once ready take them out of the oven and immediately take the custard bowls out of the hot water pan and let it cool down before serving ..
You can serve warm .. ( best during winter 😀 ) .. or serve chilled !
Stirred (stovetop) method
Ingredients: ( for Egg Custard – Stovetop method )
2 – eggs
400 ml – milk (full fat milk / thick milk) or cream
1/3 cup – sugar
1 tsp – vanilla extract ( or 1/4 tsp vanilla bean paste )
1 tbsp – all purspose flour / maida ( or rice flour or cornstarch)
400 ml – milk (full fat milk / thick milk) or cream
1/3 cup – sugar
1 tsp – vanilla extract ( or 1/4 tsp vanilla bean paste )
1 tbsp – all purspose flour / maida ( or rice flour or cornstarch)
note: If you prefer a strong custard flavour, add 2 more
egg yolks to above recipe

Method:
Step 1) Get ready with all the ingredients
Step 2) Into a saucepan, add the eggs, sugar, vanilla and stir
Step 3) To this, add the flour and stir. Add little milk, stir, add the remaining milk and stir well
Step 4) Put the heat on medium and cook until it starts thickening .. ( keep stirring )
Step 5) Once it starts to thicken, reduce to medium-low and cook until it becomes super-thick .. ( takes 10 – 15 minutes ) ..
note: Stir like an ‘ 8 ‘ to prevent the flour the custard from scorching at the bottom of the pan .. ( keep stirring the whole time or the pan will eat the best part of it 😀 ) ..
Step 6) Once it becomes super thick, turn off the heat and pour into small serving bowls ..
Let it cool down before serving .. Serve warm or chilled ! ..
