Paneer Bhurji Risoni Pasta
Paneer is Indian version of cottage cheese. Paneer Bhurji is a spicy (not so spicy but more of a reddish:) slightly tangy creamy dish made with onion, ginger, garlic, tomato, spices and paneer. This Bhurji is often eaten with Chappatti(Indian wheat flat bread). I decided to try it with Risoni pasta and the outcome was good:). Make this recipe when you don’t feel like rolling chappatti’s:) and to be honest with the taste – mmm…it is medium:) But you might like it!…make this and tell me your taste report:)
Paneer Bhurji Risoni Pasta recipe in detail:
Serves 2
Ingredients for Paneer Bhurji:

1 big onion
2 tomato
3 garlic
1″ piece ginger
1 tbsp ketchup/tomato sauce
1/4 cup coriander leaves (or parsley)
100 gms softened paneer/cottage cheese
1 tbsp cream (optional)
1/4 tspn cumin seeds
1/2 tsp turmeric powder
2 tsp kashmiri chilli powder
1 tsp coriander powder
1 tsp fennel powder
1/4 tsp chaat masala (or a pinch of amchur)
1/4 tsp pepper powder
oil & salt
For Pasta:
************
3/4 cup Risoni Pasta (for 2 servings)
8 cups water
1 tsp salt
1 tsp oil (optional)
2 green chillies (optional)
->You will be doing:
-first make Paneer Bhurji
-next boil Pasta till soft
-finally mix Pasta & Paneer Bhurji together and serve:)
First Make Paneer Bhurji:
Step 1) Fine chop the ginger, garlic and onion
Step 2) Heat a shallow pan and pour a tbsp of oil
Step 3) Add 1/4 tsp cumin seeds
Step 4) Add the ginger garlic and saute for 10 sec (don’t let it brown)
Step 5) Add the chopped onion and mix on medium heat for 10 sec
Step 6) Cover and cook on medium heat for 2-3 minutes
Step 7) While the onion is cooking, fine chop the tomatoes
Step 8) Cook the onion until light brown in colour (this takes 2-3 minutes)
Step 9) Once the onion turns light brown, add the tomato and mix
Step10) Cover and cook on medium heat for 2-3 minutes till the tomato softens
Step11) Fine chop the coriander leaves or you can also use parsley leaves.
Step12) Mix the tomato for 5-6 sec and reduce the heat to LOW(as we are going to add the spices)
Step13) Adding spices, first add 1/2 tsp turmeric powder and mix. add 2 tspn kashmiri chilli powder and mix. next add 1 tsp fennel powder and mix…and then 1 tsp coriander powder and mix
Step14) Add the chopped coriander leaves or pasrsley leaves and mix well until combined
Step15) Add 1/4 tsp chaat masala and mix (or you can also substitute with a pinch of amchoor powder/dry mango powder)
Step16) Add 1/2 tsp salt and mix mix
Step17 )Add a tbsp of tomato sauce/ketchup and mix
Step18) Add the softened paneer
Step19) Mix the paneer on LOW heat for 2-3 minutes.
Tip:- while mixing paneer, mix on low heat for a creamy bhurji(medium or high heat can dry the bhurji and will result in crumbly bhurji…so watch the heat:)
Step20) Add 1/4 tsp pepper powder and mix. check the salt and add if necessary. mix for 5-6 seconds.(Cream is optional, add at this point if you like to have a creamy bhurji). Turn off the heat.
Next- Boil Pasta till soft
Step 21) Boil the water
Step 22) Be ready with the risoni pasta (I added 3/4th cups for 2 servings)
Step 23) When the water starts boiling, add the green chillies(this is optional but adds a nice chilli infused pasta flavour:)
Step 24) Add 1 tsp salt
Step 25) Add 1 tsp oil (optional but makes it less sticky, I think so:)
Step 26) Add the risoni pasta and give it a stir (1 or 2 stir…not more:)
Step 27) Cook on medium-high heat till the pasta becomes soft (check after 8 minutes)
Step 28) Check if the pasta is cooked(the cooking time can vary…it took 10 minutes for me)
Step 29) Once the pasta is cooked, take out the chillies (and have a bite:)
Step 30) Turn off the heat and drain the pasta water
Finally mix both Pasta and Paneer Bhurji
Step 31) Heat the Paneer Bhurji Pan on medium for 40 sec.
Step 32) Add the cooked pasta and slowly mix for a minute and turn off the heat…
Now you can eat and remember to rate or write to me after eating:)
