Peas Rice & Chicken Fingers ( for toddler / kids & family – 1 meal for all :)..
Ingredients : ( for Peas Rice & Chicken Fingers ) ( Serves 2 Adults + 1 Toddler )
For Peas Rice :
1 Cup – Rice ( rinsed )
2.5 Cups – Water
3/4 Cup – Peas ( fresh or frozen )
optional -> 1 cardamom, 1 cloves , 1″ cinnamon stick
1 Tbsp – coriander leaves (chopped)
1 tsp – ginger-garlic paste ( or crushed )
1 Onion – chopped
Salt – 1/2 tsp , Pepper – 1/4 tsp ( or a pinch )
Oil – 2 tsp
1 Cup – Rice ( rinsed )

3/4 Cup – Peas ( fresh or frozen )

1 Onion – chopped
Salt – 1/2 tsp , Pepper – 1/4 tsp ( or a pinch )
Oil – 2 tsp
For Chicken Fingers:
1 boneless Chicken Breast – ( chopped into thin 1″ fingers /strips)
tomato sauce – 2 tsp,
Oil – 1 Tbsp, salt – to taste
Spice Powders – ( 1/3 tsp turmeric powder, 1/4 tsp chilli powder,
2 tsp coriander powder, 1/2 tsp cumin powder )
Method:
Part 1 – Cook the rice
Step 1) Get ready with all the ingredients..
Step 2) Heat a deep pan and pour 2 tsp oil
Step 3) Add the cardamom, cinnamon, cloves and cook for 10 seconds
Step 4) Add the ginger-garlic paste and cook for 20 seconds
Step 5) Add the chopped onion and saute until light brown ( takes 2 – 3 minutes)
Step 6) Add the green peas and cook for 2 minutes..
Step 7) Add the coriander leaves, pepper and cook for 1 minute
Step 8) Add the rice, water and salt to taste
Step 9) Cover, turn the heat to high and bring it to a boil..
Step 10) Once it boils, reduce the heat to low and cook for 15 minutes..
While the rice is cooking, cook the chicken..
Part – 2 Cook the chicken
Step 1) Cut the chicken into thin 1′ strips or fingers..
Step 2) Marinate the chicken with spice powders ( turmeric powder, chilli powder, coriander powder, cumin powder ), salt and tomato sauce. Let it sit fot 5 minutes..
Step 3) Heat a fry pan and pour 1 tbsp of oil
Step 4) Add the marinated chicken pieces, turn the heat to medium-high and let the chicken come to a sizzling point ..
Step 5) Once the chicken starts sizzling, reduce the heat to medium and fry until almost dry ( takes 10 – 12 mintues) ..
Step 6) Once it looks dry and roasted, turn off the heat..
To Serve your toddler: Let the chicken cool down and serve in a bowl as finger food.. ( if your toddler is fuzzy about the size, shred them into tiny pieces and serve )..
In the meantime, the rice will be ready .. gently fluff the rice.
To Serve your toddler: Let the rice cool down and then serve/feed around 1 Cup of peas rice.
