Almonds (badam) – 3/4 cup or 180 gms
Cashews – 1/2 cup or 120 gms
Pistachios – 1/2 cup or 120 gms
Walnuts – 1/4 cup or 60 gms
cardamoms – 5
saffron (kesar) – a pinch
Raw sugar – 3/4 cup

Method:

Step 1) Heat a pan on medium-heat and roast the almonds for 1 minute and add to a plate

Step 2) Add cashews to same pan and roast for a minute ( or until brown spots on top ) and add to same almonds plate

Step 3) Add pistachios and roast for a minute and add to the nuts plate

Step 4) Roast walnuts for 30 seconds and add to the nuts plate

Step 6) Add 5 cardamoms and let it cool completely

Step 7) To grind: Add some nuts into a clean dry blender ( dry blender is better), add 2 tbsp. raw sugar and pulse for 3-4 times until powdery. Add to a container.

tip: ( Do not grind for longer time as the nuts can get oily )
tip: ( Grind in small batches so that the nuts will grind smoothly without big chunks )
tip: ( grinding with little sugar prevents the nuts from sticking together )

Step 8) Once you finish grinding all the nuts and added to a container, crush and add a pinch of saffron to this nuts powder. Mix well. Close with an airtight lid and store in a cupboard or pantry. You can use up to 2 months 🙂
