Vegetable Pasta recipe

Indian-style pasta recipe for kids lunchbox or dinner


Ingredients: ( for vegetable pasta recipe )

oil – 1 tbsp
ginger and garlic ( crushed or chopped ) – 1 tsp
peas – 1 cup
carrot – 1 cup
beans – 1 cup ( 1 inch cut )
1 – onion ( sliced )
2 – tomatoes ( chopped )
1/4 tsp – turmeric powder
1/4 tsp – chilli powder
1/4 cup – tomato sauce
salt – to taste
pasta – 2 cups ( boiled until soft )
coriander leaves or mint or parsley – 1 tsp

Method:

Step 1) Heat a pan and pour oil

Step 2) Add ginger and garlic paste and fry for 30 seconds

Step 3) Add sliced onion and cook until soft

Step 4) Add 2 chopped tomato, cover and cook until soft

Step 5) Add turmeric powder, chilli powder and mix

Step 6) Add Beans, Carrot, Peas and mix.

Step 7) Cover and cook for 15 minutes on medium-heat

Step 8) In the meantime, Boil the pasta until soft. Drain and keep aside

Step 9) Add salt and tomato sauce to the vegetable mix and mix. Add coriander ( or mint or parsley leaves ) and mix.

Step 10) Add the cooked pasta and mix. Cover and cook on low for 2 minutes and turn off the heat

Mix and serve.. .. or pack for lunch ..
